Can I send images? 
Yes, images and pretty much any file type.

Calls or just chats? 
Both. Voice and video calls, plus voice messages.

Can I talk to users on other Matrix servers? 
Yes, no restrictions.

Will people know I joined with my Chainsim number? 
People can only find you if you share your number with them.

If I sell my number, do my chats go with it? 
For now, chats stay with the number (but you can delete it anytime if you are current owner of the number).
