A human study found that the common food emulsifier carboxymethylcellulose (CMC) may harm gut health.
Healthy adults who ate 15 g of CMC daily for 11 days showed:
❌ Changes in gut bacteria
❌ Changes in gut metabolism
❌ Signs of a less healthy gut microbiome
👉Researchers concluded that the widespread use of CMC in processed foods may contribute to chronic inflammatory diseases by disrupting the gut microbiome.
The amount used in the study was higher than what most people consume, but it may reflect diets that rely heavily on ultra-processed foods containing multiple emulsifiers.
